Hello and welcome to Meal Prep Plan, Easter Edition.

Lol there is actually nothing Easter-y about this, it just happens to be a holiday and I’m getting my meal prep on! Let’s get right to it – this is a good one 🙂


Healthy Meal Prep Banana Pancakes

Thai Red Curry Fish

In a small bowl, simply whisk together 1/3 c. full-fat coconut milk (from a can) and 1 tbsp. thai red curry paste (can be found at any grocery store! I like Thai Kitchen brand). Place your trout or salmon in a large tupperware or Ziploc bag and pour your coconut milk mixture over it, then let it sit for a few hours or overnight to marinate. When ready to cook, top with salt + pepper and bake it at 400 degrees for 10-12 mins or until it flakes with a fork.

Carrot Sweet Potato Soup

Coconut Rice (use the recipe from that post, and just add in 1/2 tsp. ground turmeric at the end!)

Chocolate Almond Fudge Balls OR Chocolate Peanut Energy Bars (if you feel like making these 2 weeks in a row like me b/c the obsession is real)
