Meal prep plan #5
Hi friends! I’M BACK! It’s been a while since I’ve done one of these, so I apologize – I couldn’t keep up with the weekly promise. Oops. I figure it might make more sense to start doing these every other week anyway, because once there are a bunch up on the site you can go back and use old one (or mix and match!)
This week’s plan features a new recipe that I’m VERY excited about. It’s another lettuce wrap situation because apparently I’m super into those recently. It features peanut butter so you KNOW it’s good stuff.
Spicy sesame eggplant + mushrooms
Simply sauté cubed eggplant (I used Japanese, the small slim ones) and sliced mushrooms in 1 tbsp. avocado oil until cooked and fully softened. Add in 1 tbsp. sesame oil and 1-2 tbsp. soy sauce for extra flavour, then top with sesame seeds and chili flakes.
Easy lentil soup (that’s a good recipe, but feel free to make any one you prefer!)
Salty cinnamon cashew bites (linked to recipe from my Instagram!)
Peanut chicken + sweet potatoes
Chard wraps w/ sweet potato, eggplant + zucchini
Peanut chicken with rice (if you feel like cooking a batch of rice, this would be a killer combo!)
Salad w/ peanut chicken, sweet potatoes + dressing of choice (sesame or peanut would be nice)
