Meal Prep Plan #7
Hello!!!! I have decided to start posting these on Saturdays because it makes WAY more sense and I don’t know why I didn’t make this change sooner…lol. I think you guys need more time pre-Sunday to buy groceries and PREP for your meal prep! So we’re doing this from now on 🙂
This week is a gooood one and features a new falafel recipe, which is incredibly simple + delicious, plus my heavenly sweet potato muffins which I neglected for a while but made again last week and omg – I forgot how great those babies are. I also redid the photos for that post because they were atrocious LOL. Exciting things all around this week!
Sautéed greens + shrooms
Simply chop up half of your bunch of Swiss chard, along with your mushrooms, and cook them in a pan over medium heat with some avocado oil, lemon, salt, pepper + garlic until wilted.
Falafel + roasted sweet potatoes w/ almond cheese
Falafel wrapped in Swiss chard w/ sautéed veggies + almond cheese (+ hummus if you have!)
Salad w/ romaine, roasted sweet potatoes, sautéed veggies + lemon-mustard dressing (olive oil, lemon, mustard, honey, salt + pep)
