Meal Prep Plan #10
Happy Saturday lovely readers! I am BACK with another meal prep plan, and it’s a real good one. Possibly one of my favourites of all time – I NEVER got sick of eating these meals. I feel like I say this every time??? But perhaps each one truly is better than the last! Lol. Let’s dive in 🙂
I’m going to write a full post on my Whole30 experience soon, but this BBQ chicken was definitely one of my favourite things that I made during the program. The sauce recipe is from the book, It Starts with Food, and it is amazingly delicious – as well as totally sugar free and made with super clean ingredients. I love to eat the chicken with baked sweet potatoes (as in the recipe below), but I also ended up throwing it on top of salad/slaw multiple times during the week, and finishing with a drizzle of the spicy cashew sauce. DAMN!
Note: the applesauce + tomato puree on the grocery list are for the BBQ sauce, which also includes a few other spices/seasonings that are not included here (because you may already have them). Also, feel free to make the BBQ sauce + sweet potatoes, but replace the chicken with chickpeas or shredded jackfruit to make it vegan! 🙂
Roasted zucchini + cherry tomatoes
Chop zucchini into rounds and half tomatoes, then roast at 400 degrees with olive oil, salt, pepper and garlic powder for 20-30 mins, flipping everything halfway through.
Crispy roasted broccoli
Chop your broccoli into bite-sized pieces and coat with 2 tbsp. olive or avocado oil, 1/2 tsp. garlic powder, salt + pepper. Roast at 400 degrees for 30-40 mins or so, until charred and crispy.
Simply shred your choice of slaw veggies (cabbage, jicama, carrot, etc.) using a box grater or the shredding attachment on your food processor. Store the slaw in an airtight container in the fridge and add to potatoes/salads as desired!

BBQ chicken w/ slaw mix + spicy cashew sauce
Salad w/ greens, avo, roasted veggies, BBQ chicken + spicy cashew sauce (thin as needed to make it the consistency of dressing!)
Baked sweet potatoes stuffed w/ roasted veggies, avo + spicy cashew drizzle
