I’m writing this from my sick bed today…hah. Luckily I made and shot this recipe last week for you guys, so I am allowed to lie in bed to share this delectable recipe with you 🙂

I’ve been really craving something crispy + coconut-y in the past few weeks and knew I had to make a giant bowl full of goods that complement each other perfectly. Enter: this dish!

This meal checks all the boxes for me: a hit of protein, made super crispy + delicious, plus cauliflower “rice” that keeps it grain-free (I’ve been more or less trying out this way of eating and feeling pretty great!) while feeling carb-y, plus a heap of garlicky greens and of course, slices of avo for creaminess + good fats.

These lil bites would also be delicious served with your favourite dip – I imagine some kinda of sweet + spicy Asian sauce would be incredible here! Or even a simple hummus or guac 🙂 Hope you try these out and do something fun n creative with them! Bowls = life, so I think this route is pretty perfect 😉

Crispy Coconut Chicken Bites with Cauliflower Rice + Kale Chips

Yield: 4 bowls

Ingredients

    For the chicken:
  • 2 chicken breasts, cut into bite-sized chunks
  • ½ c. arrowroot starch or cornstarch
  • ½ tsp. salt
  • ½ tsp. garlic powder (optional, for extra flavour!)
  • Fresh pepper
  • 1 beaten egg + 2 tbsp coconut milk (or other milk)
  • 1 1/2 c. unsweetened shredded coconut
  • Avocado oil for drizzling
    For the cauliflower rice:
  • 1 large head cauliflower, riced in a food processor
  • 1 tbsp. coconut oil, for sautéing
  • Salt + pepper + garlic powder, to taste
    For the kale chips:
  • 1 head organic kale, chopped into bite-sized pieces
  • 1 tbsp. avocado or melted coconut oil
  • Salt + pepper + garlic powder, to taste
    Other:
  • Sliced ripe avocado, for serving
  • Tamari, hot sauce or fresh herbs, for serving

Instructions

  1. Preheat your oven to 350 degrees and line a baking sheet with parchment.
  2. Set up 3 bowls to make the chicken: 1 with the starch, 1 with the whisked egg + milk, and 1 with the shredded coconut. Take each piece of chicken and dip it first in the starch, shaking off any excess, then in the egg mixture, and finally in the coconut. Place each piece on the prepared baking sheet and repeat with all of the chicken pieces.
  3. Once all of the bites are ready, drizzle generously with avocado oil and bake for 15-20 mins, or until slightly golden brown and cooked through.
  4. To make the kale chips, simply place all of your kale pieces in a bowl, coat in oil (massaging to mix through), and add spices as desired. Place on another baking sheet and pop in the oven for 10-15 mins, or until crispy and browned. Feel free to bake at the same time as the chicken!
  5. Meanwhile, heat your coconut oil in a large pan and add your riced cauliflower. Cook over medium heat for several minutes, adding salt, pepper and garlic to taste, until it is lightly browned. Remove from the heat and set aside.
  6. To build your bowls, start with a base of cauliflower rice, then top with several coconut chicken bites, a pile of crispy kale and slices of ripe avocado. Drizzle with hot sauce, fresh herbs or tamari if desired. Enjoy!
