Buffalo Cauliflower Sandwich with Garlicky Kale + Avocado-Dill Spread

Hi my friends! It’s been a while. A few months ago, I made the commitment to post one recipe per week – and I was, to my delight, actually sticking to it.

Even though precisely no one besides me was counting, I find it enormously helpful to set these kinds of small, realistic goals that push me to continue producing creative content on a regular basis. Practicing my creativity often through recipes, photos and writing is something that I know will make me improve over time and help me to broaden + visualize my ambitions.

So, that being said, I dove back into my food photography game last week, and it felt wonderful. I’ve been dreaming up this sandwich for a few months now, and I finally got around to making + shooting (+ eating) it. And let me tell you – it is worth all of my anticipation.

This beaut of a sandwich features thick slices of cauliflower, lathered in a buttery buffalo sauce + layered with piles of salty, garlicky sautéed kale. I was initially going to make some sort of homemade ranch to go with it (which you could totally do), but based on ingredient availability, I ended up going with a creamy, bright, avocado-based green sauce, flecked with fresh parsley and a generous sprinkle of dried dill. (Fun fact – I actually really disliked dill until recently, when I started working at a restaurant that uses it in copious amounts. I’ve somehow developed a newfound love for it now!)

Buffalo Cauliflower Sandwich with Garlicky Kale + Avocado-Dill Spread

Ingredients

    For the sandwich:
  • 1 head cauliflower
  • 2 tbsp. avocado oil
  • 2 tbsp. cornstarch
  • ½ tsp. garlic powder
  • ½ tsp. paprika
  • ½ tsp. sea salt
  • 3 tbsp. Frank’s Red Hot Sauce (or preferred hot sauce)
  • 1 tbsp. butter
  • 1 head purple or green kale, chopped
  • 1 tbsp. avocado oil
  • 2 cloves garlic, minced
  • Sea salt
  • 4 sandwich buns of choice (I used gluten-free)
    For the sauce:
  • 1 small ripe avocado
  • 2 tbsp. tahini
  • 1 tbsp. avocado oil
  • 2 tbsp. lemon juice
  • ½ tsp. minced garlic
  • ½ tsp. sea salt
  • ½ c. chopped fresh parsley
  • 1 tsp. dried dill
  • 3-4 tbsp water, as needed

Instructions

  1. Preheat your oven to 425 degrees. Slice the cauliflower lengthwise (through the core) into 1/2 inch “steaks” – you will probably only get 2-4 intact steaks, while the ends will crumble into florets. That’s okay, just save them!
  2. Mix together your cornstarch, garlic, paprika and sea salt in a small bowl. Carefully sprinkle this mixture evenly over both sides of your cauliflower steaks. Place them on a baking sheet and drizzle both sides with the avocado oil.
  3. Bake cauliflower steaks for 15 minutes, then carefully flip them and bake for an additional 15 or until golden brown and crispy on the outside.
  4. Meanwhile, heat 1 tbsp. avocado oil in a large skillet and add your kale. Cook for a few minutes until starting to wilt. Add your minced garlic and a good pinch of sea salt and continue cooking for an additional few minutes, until soft.
  5. Melt your butter and hot sauce together, then brush this mixture on both sides of each cauliflower steak. Set aside.
  6. Combine all of your sauce ingredients in a blender and blend until smooth, adding additional splashes of water as needed. It should be quite thick for spreading on the sandwich.
  7. To assemble, toast your buns, then spread one side with a generous amount of avocado spread. Top with a pile of the kale and then 1-2 cauliflower steaks. Add more sauce and/or fresh herbs if desired. Enjoy!
