15 Minute Fish Tacos with Mango Salsa
HI FRIENDS! Although I’ve shared this salmon taco recipe before, this is shockingly the first time I’m posting the classic fish taco recipe that I love and make frequently. Fish tacos are one of my all time favourite meals, and great news - I recently discovered a hack to make them 100x easier + more delicious!
If you’re familiar at all with my recipes, you may have seen my viral salmon bite recipe before (still make it weekly tbh). It occurred to me a couple of weeks ago that I could use that same seasoning + cooking method on white fish and use them in fish tacos. I tried it out and the result was AMAZING - similarly to the salmon bites, you get way more flavour in every bite by using this method, and it takes literally 15 minutes from start to finish. All you have to do is coat your cubed fish in seasonings, sear them on both sides for a couple of minutes, and then assemble your tacos with a few other components. I actually love eating fish tacos in gem lettuce wraps but you can absolutely use flour or corn tortillas if you prefer! Such an easy, fresh, nutritious + flavourful dinner as the weather warms. 15 Minute Fish Tacos with Mango Salsa
Ingredients
12oz firm white fish (1 large or 2 smaller filets, enough for 2 people)
2 tbsp olive oil
1 tbsp honey
2 tsp seasoning blend - I used 1 tsp Trader Joe’s Citrusy Garlic Seasoning Blend + 1 tsp TJ’s Chili Lime Seasoning Blend, but you can also just do 1/2 tsp each garlic, onion, chili + cumin powders
1/2 tsp sea salt
Little gem lettuce, for wrapping
Spicy mayo, for topping (store bought or homemade - just mix mayo with hot sauce + a bit of lime juice to taste)
Fresh cilantro + lime, for topping
For the mango salsa:
1 cup cherry or grape tomatoes, diced
1 ripe mango, diced
1/4 cup red onion, diced
1/4 cup cilantro, diced, plus more for topping
Juice of 1/2 lime
Salt + pepper to taste
For the guacamole:
2 ripe avocados
1/3 cup finely diced red onion
1/4 cup finely diced cilantro
Generous pinch of sea salt
Juice of 1/2 lime
Method
Start by cutting your fish into 1-inch cubes and adding them to a bowl. Add olive oil, honey, spices + sea salt and mix to generously coat the fish. Set aside.
In another bowl, add all mango salsa ingredients. Mix to combine and taste. Add more salt/lime as needed
In another small bowl, mash your avocado. Add remaining ingredients and mix, then taste and adjust as needed.
When ready to cook the fish, heat a large pan over medium (I always use my cast iron). Once hot, add your fish cubes and let them cook on one side for 4-5 minutes until browned. Flip each piece and cook an additional 3-4 minutes until the exterior of the pieces is golden brown and the middle is just cooked through. Remove from heat.
To assemble, lay your gem lettuce pieces on a plate or tray. Top each with a big scoop of guacamole and a few pieces of fish. Top with the mango salsa, then drizzle with spicy mayo and other desired toppings.
