Crispy Salmon Bite Bowls with Sesame Greens + Spicy Mayo

For real though, I feel like I accidentally became the salmon queen so I’m always trying to find new, delicious ways to make my favourite lil salmon bites. I’ve had crispy panko-crusted salmon bites on my list for a whiiiile now and I’m so glad I finally made them - they truly blew me away. Perfectly crispy, golden brown salmon bites with the same salty, garlicky flavour of my original ones. Also, they take like 5 minutes to throw together and these ones are even EASIER to cook if you can believe it because we’re crisping them up in the air fryer. Pair with some sticky jasmine rice, sesame greens + spicy mayo for a quick, healthy and incredibly flavourful dinner. If you’re a fan of my OG salmon bites you neeeed to make these ones. ENJOY!

Crispy Salmon Bite Bowls with Sesame Greens + Spicy Mayo


Ingredients

  • 1 lb salmon, skin removed and sliced into 1-inch chunks

  • 1 tbsp tamari

  • 1 tbsp sesame oil

  • 1 tbsp honey

  • 1 clove grated garlic

  • 2/3 cup panko breadcrumbs mixed with 1/4 tsp each salt, garlic powder + onion powder

  • Avocado oil spray for air frying

  • A few large handfuls greens of choice (baby kale or spinach works great)

  • 1 tbsp sesame oil

  • 1 clove grated garlic

  • 1 tbsp sesame seeds

  • Cooked jasmine rice, for serving

  • Quick pickled cucumbers, for serving

  • Spicy mayo, for serving (recipe below)

For the spicy mayo:

  • 1/4 cup mayo of choice (I used chosen avocado oil mayo)

  • 1 tsp Calabrian chili paste

  • 1/2 tsp tamari

  • 1/2 tsp rice vinegar

  • 1/2 tsp sesame oil

  • Splash of water, to thin

Method

Start by making your spicy mayo. Whisk together all ingredients in a small bowl or jar until smooth, adding a splash of water if needed to thin. Taste and adjust if desired, then set aside.

To make the salmon bites, place your salmon chunks in a bowl and add the sesame oil, tamari, honey and garlic. Stir to evenly coat each piece. In a separate bowl, add your panko mixture. Dip each salmon chunk in the panko, gently pressing to coat each side, then place on the tray of your air fryer (you can also use a rack over a baking sheet in the oven). Repeat with remaining salmon chunks. Spray generously with avocado oil and air fry at 400 degrees for 10 minutes until lightly golden brown on the outside and cooked through in the middle (you might need a few extra minutes if using an oven).

To make the sesame greens, heat a skillet over medium with 1 tbsp sesame oil. Add your greens, grated garlic and a big pinch of salt and stir. Let cook for 2-3 minutes until the greens are wilted and the garlic is lightly toasted. Remove.

To assemble bowls, portion out white rice, then add a spoonful of the greens and a few crispy salmon bites. Add pickled cucumbers if desired, then drizzle with spicy mayo and enjoy!
