Gluten-Free Apple Cinnamon Snack Bread

It’s apple season! In typical fall fashion, I had to bake up something using this wonderfully delicious fruit, which lends a ton of flavour and moisture to baked goods.

I wanted to re-make a version of a grain-free apple bread recipe that I had previously posted on my old blog, but I remembered that it was a bit finicky due to using coconut flour. Instead, I decided to go for my trusted combo of oat and almond flours, and this gluten-free apple cinnamon snack bread turned out to be divine.

This apple bread is:

  • Made gluten-free using almond and oat flours

  • Filled with tasty and warming fall spices, reminiscent of chai

  • Naturally sweetened with applesauce, coconut sugar and maple syrup

  • Dairy-free

  • So delicious and perfect for a morning or mid-afternoon snack

Gluten-Free Apple Cinnamon Snack Bread


Ingredients

  • 1 cup fine almond flour

  • 1 cup oat flour

  • 1 ½ tsp. baking powder

  • ½ tsp. baking soda

  • ¼ tsp. salt

  • 2 tsp. cinnamon

  • 1 tsp. ground ginger

  • ½ tsp. nutmeg

  • ½ cup unsweetened applesauce (room temp)

  • ¼ cup coconut sugar

  • ¼ cup maple syrup (room temp)

  • ¼ cup coconut oil, melted + cooled

  • 2 tbsp almond butter

  • 1 tsp. vanilla

  • 2 eggs

  • 2 large apples, finely chopped

Method

Preheat your oven to 350 degrees and grease a standard loaf pan.

In a large bowl, whisk together your applesauce, coconut sugar, maple syrup, coconut oil and almond butter until smooth. Add in your vanilla and eggs and whisk well until creamed and slightly foamy.

To the wet ingredients, stir in your cinnamon, ginger and nutmeg. Add the oat flour, almond flour, baking powder, baking soda and sea salt, gently stirring with a spatula until you have a smooth, thick dough. Fold in your apple pieces.

Pour batter into your loaf pan, top with sliced apples (if desired) and bake for 45 minutes, or until the bread is set in the centre and the edges are browned.

Let cool completely before slicing and serving!

Makes 12 slices
