Crispy Smashed Potatoes with Vegan Caesar Dressing

Crispy smashed potatoes are having a moment right now, and I am HERE for it. Most people that know me know that I am potato obsessed - I love them in all forms so crispy, crunchy, salty smashed potatoes are right up my alley.

These crispy smashed potatoes are taken up a notch with my creamy vegan caesar dressing. I knew I wanted to pair these with some kind of creamy, tangy sauce, so this dressing came to mind right away. After testing it, I gotta say - this combo is incredible. You can drizzle the dressing overtop or dip the potatoes in it, and it’s SO perfect with them. These would make a great meal alongside some chicken or other protein!

These crispy smashed potatoes with vegan caesar dressing are super easy to make - you just boil the potatoes, smash them, bake them and then blend up your sauce while they get crispy (no soaking required since the dressing uses sunflower seeds!). I top these with lemon zest + capers for some extra punch. Any fresh herbs that you have would be amazing too! I hope you love these.

Crispy Smashed Potatoes with Vegan Caesar Dressing


Ingredients

  • 3 cups small potatoes 

  • 2 tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp sea salt

  • Fresh black pepper

For the vegan caesar dressing:

  • ½ cup raw sunflower seeds

  • 2 tbsp nutritional yeast

  • Juice of 1 lemon

  • 1 clove garlic

  • 1 tsp dijon mustard

  • 1 tsp capers (optional but delicious)

  • ½ tsp sea salt

  • ⅓ - ½ cup water, to thin

Method

Heat a large pot of water until boiling. Add your potatoes and maintain a low boil, letting the potatoes cook for 20-30 minutes depending on their size. They’ll be ready once fork tender. Drain and set aside to cool.

Preheat oven to 425 degrees and generously oil a large baking sheet. Add your potatoes and use the back of a glass to carefully “smash” each potato to about ¼ inch thickness. If they’re still hot, let sit for 5-10 minutes to cool off, which will help with the crispiness. Drizzle with olive oil and then add salt, garlic powder and fresh pepper.

Bake your smashed potatoes for 30-40 mins until they are deeply golden brown and crispy.

While potatoes bake, add all of your vegan caesar dressing ingredients to a high speed blender and blend for a few minutes until smooth. You may need to add a bit more water to get it to the right consistency. Taste and adjust salt/lemon as needed.

Serve crispy smashed potatoes drizzled with the vegan caesar dressing, then topped with lemon zest, sea salt and chopped capers if desired. Enjoy!
